No Bake Bars
INGREDIENTS:
1 Cup Old Fashioned Oats
1/2 Cup unsweetened coconut flakes
1/2 Cup Sweetened Coconut flakes
1/4 Cup Flaxmeal (hi, fiber!)
1/2 Cup Honey (y’all, honey can be a bear to measure - so just remember that this is your glue and make sure you have enough)
1/4 Tsp salt
1 Tsp Vanilla
TOPPING:
1/4 Cup chocolate chips (white chocolate is a hit in my house, too - if this is your choice, sub the peanut butter for 1/2 TBS coconut oil)
1 TBS Peanut Butter
Sprinkle of large grain sea salt (tread lightly here!)
MAKE IT:
In a smaller mixing bowl, combine your oats, coconut and flax meal. Set this aside
In a large, microwave safe bowl (or the stove top in a larger pot), slowly melt the PB and honey until smoothly mixed together. Add vanilla and salt to this mix.
Combine your dry ingredients with your melted mixture and stir until combined.
Prepare your pan (8x8 works well) with parchment paper and spread mixture into the pan, pressing firmly down.
MAKE YOUR TOPPING:
In microwave or on the stove, melt your topping chocolate choice and either the PB or Coconut Oil. Once melted, spread over your bars. I prefer to add a light sprinkle of chunky sea salt on top of chocolate.
REFRIGRATE. EAT. ENJOY.
Hint: The REAL ingredients to a better milk supply? 1 part skin to skin with baby, 2-3 parts frequent milk removal, 8 parts feeding baby on demand.
